A shawarma broiler or rotisserie machine runs for hours every single day, often the busiest piece of equipment in the kitchen. That kind of daily load means maintenance habits matter more than for equipment that only runs occasionally.
Clean the drip tray and grease channels daily, not weekly — built-up grease is the most common cause of flare-ups and uneven heat distribution on gas broilers. Check the skewer motor and gearbox for smooth rotation; a motor working against resistance from a misaligned skewer wears out faster than it should.
Inspect gas connections and burner jets monthly for any signs of soot build-up or uneven flame — a yellow, uneven flame usually means the jets need cleaning. And check the glass door seals and hinges regularly; a door that doesn't seal properly loses heat and makes the burners work harder to compensate.
